In today’s society more and more people are deciding to eliminate gluten from their diets. Some have a diagnosed medical need, but others may choose to eliminate it as a precautionary. The Mayo Clinic defines gluten-free diets as a food plan that “excludes foods containing gluten.” They go on to define gluten as “a protein found in wheat, barley, rye and triticale (a cross between wheat and rye).“
Regardless of the reasons for selecting a gluten-free diet, the fact is that there is more of a demand and an awareness of food choices that meet these requirements than in prior years.
